En el presente trabajo se promueve la elaboración de un yogurt con características simbióticas utilizando mezclas de probióticos y oligofructosa. Igualmente se determina la vida útil del producto final a través del modelo de Arrhenius. Los resultados indicaron que es posible obtener un yogurt simbiótico con un tiempo promedio de vida útil de quince dias aproximadamente y sensorialmente atractivo para los consumidores potenciales.
